- 1 medium eggplant, peeled and sliced
- 4 eggs, beaten
- 1/2 tsp. pepper
- 1 1/2 c. milk
- 1 tsp. salt
- 1 1/2 c. grated sharp cheese
- 1 1/2 c. cracker crumbs
- 1 stick margarine, melted
Directions

1Cook eggplant until mushy; drain well.

2Add all ingredients. Reserve 1/2 cup cheese, 1/2 cup cracker crumbs and small amount of butter; mix well.

3Pour in greased baking dish.

4Sprinkle with reserved cheese, cracker crumbs and melted butter.

5Bake at 325° to 350° for 25 to 30 minutes.

6Makes 6 to 8 servings.
