  • 2 eggplant
  • salt to taste
  • pepper to taste
  • flour to cover eggplant
  • corn oil
  • 1/2 lb. ground meat
  • 1 pkg. dry Italian seasoning
  • 1 small can tomato paste
  • 3 cans water
  • 1/2 c. Parmesan cheese

Directions

    Peel and slice eggplant.

    Salt, pepper and flour each slice. Lightly brown in corn oil.
