- 1 large eggplant
- 1 onion, diced
- 1 clove garlic, crushed
- 1 green pepper, diced
- 2 Tbsp. bacon grease
- 3 slices toasted bread, crumbled
- 1 egg
- 1/2 c. Pet milk
- 2 Tbsp. butter
- Ritz crackers, crumbled
Directions

1Boil eggplant in salted water, drain and mash.

2Saute onion, garlic and pepper in bacon grease.

3Add eggplant and cook 5 minutes.

4Stir in bread crumbs, egg, milk, butter, salt and pepper (to taste).

5Pour into casserole dish, sprinkle top with cracker crumbs and dot with butter.

6Bake at 375° for 30 to 40 minutes.
