- 1 medium eggplant, peeled and cubed
- 1 lb. ground beef
- 2 c. cooked rice
- 9 1/2 slices bread, made in crumbs plus 1 tsp. butter
- pepper and salt to taste
- 1 chopped onion
- 1 egg, beaten
Directions

1Cook eggplant in a little salty water; drain and mash.

2Cook hamburger and onion until done.

3Mash meat to keep it from lumping, them drain and add pepper.

4Crumble rice in eggplant, then add beaten egg.

5Mix well.

6Pour in dish and top with buttered crumbs.

7Bake at 350° until brown.
