- 1 onion, diced
- cheese, grated
- 1 1/2 sticks margarine
- 1 pkg. dressing mix
Directions

1Peel and dice eggplant and brown a little in skillet with 1 stick of butter.

2Rotate in casserole dish the eggplant, onion and cheese and mix until all gone.

3Put 1/2 stick of butter on top in pats.

4Cover and bake at 350° for 35 to 40 minutes or until brown.
