  • 1 medium sized eggplant
  • 1 beaten egg
  • 1/2 c. milk
  • 2 Tbsp. melted butter
  • 1 small onion, chopped
  • 1 c. dry bread crumbs
  • 1/2 c. buttered bread or Ritz cracker crumbs
  • 1/2 c. grated Cheddar cheese

    Pare eggplant; cut in 1-inch cubes.

    Cook in boiling salted water for 8 minutes; drain.

    Add next 5 ingredients.

    Place in greased baking dish.

    Top with buttered crumbs and grated cheese. Bake in a 350° oven for 30 minutes.
