- 2 Tbsp. melted butter
- 1 small onion, chopped
- 1 c. dry bread crumbs
- 1/2 c. buttered bread or Ritz cracker crumbs
- 1/2 c. grated Cheddar cheese
Directions

1Pare eggplant; cut in 1-inch cubes.

2Cook in boiling salted water for 8 minutes; drain.
