- 1/2 c. butter or margarine
- 2 medium to large eggplant, peeled and chopped
- 1 lb. ground beef
- 1 link smoked sausage, diced
- 4 slices bacon, chopped and cooked
- 2 c. cooked rice
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 hot pepper, chopped (optional)
- salt and pepper to taste
- bread crumbs
Directions

1Saute chopped vegetables in butter until soft.

2In large pot, brown beef and sausage and add bacon.

3Cook until meat is blanched.

4Add salt and pepper to taste.

5Add vegetable mixture to meat mixture; cook 15 to 20 minutes over low heat.

6Add rice, using small amount at a time; don't make dressing runny.

7Put in casserole dish.

8Top with bread crumbs and bake 15 to 20 minutes at 375°, uncovered.
