Eggplant Casserole

Ingredients

  • 1 medium eggplant, peeled and cubed
  • 1 tsp. salt
  • 1 beaten egg
  • 3 Tbsp. butter
  • 1 c. dry bread crumbs
  • 2 Tbsp. chopped green pepper
  • 1 medium onion, chopped fine
  • 1 1/2 c. canned tomatoes
  • 1 c. cream-style corn
  • 1/2 c. grated cheese
  • salt and pepper to taste

Directions

    Peel and cube eggplant.

    Add salt and barely cover with water. Cook until tender and drain.

    Add remaining ingredients.

    Put in a greased baking dish.

    Cover top with 1/2 cup grated cheese.

    Bake, uncovered, at 350° for 30 minutes.
