- 1 medium eggplant, peeled and cubed
- 1 tsp. salt
- 1 beaten egg
- 3 Tbsp. butter
- 1 c. dry bread crumbs
- 2 Tbsp. chopped green pepper
- 1 medium onion, chopped fine
- 1 1/2 c. canned tomatoes
- 1 c. cream-style corn
- 1/2 c. grated cheese
- salt and pepper to taste
Directions

1Peel and cube eggplant.

2Add salt and barely cover with water. Cook until tender and drain.

3Add remaining ingredients.

4Put in a greased baking dish.

5Cover top with 1/2 cup grated cheese.

6Bake, uncovered, at 350° for 30 minutes.
