  • 1 lb. ground meat
  • 2 Tbsp. shortening
  • 1 medium onion, chopped
  • 2 stems celery, chopped
  • 1 small green pepper, chopped
  • 1/2 clove garlic
  • 3 eggplants (small), peeled and cubed
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 c. water
  • 1 1/4 c. bread (cornbread) crumbs

Directions

    Fry ground meat in shortening until brown. Add onions, celery, green pepper, garlic and eggplant. Fry until wilted. Add salt and pepper; add water and cook tender and still juicy. Add 1 cup bread crumbs; mix well. Place in casserole dish. Sprinkle remaining bread crumbs on top. Bake at 400° until brown, about 40 minutes.
