- 1 large eggplant
- 1/2 tsp. salt
- 1 can mushroom soup
- 1 chopped onion
- 1/2 stick margarine, melted
- 1/2 (8 oz.) herb stuffing mix
Directions

1Peel, cube and boil eggplant.

2Mix with salt, soup, onion and egg in bowl.

3Mix margarine and stuffing mix.

4Add 1/2 mix to mixture.

5Pour in 2-quart casserole; top with stuffing mix.

6Bake at 350° for 40 to 45 minutes.
