- 1 medium eggplant
- 3 medium onions
- 1 green pepper
- 1/2 tsp. garlic salt
- 4 Tbsp. cooking fat
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. grated cheese
Directions

1Peel eggplant and onions.

2Slice in medium rounds.

3Stem and seed pepper and cut into rings.

4Cook in salted water until tender. Drain.

5Place in casserole.

6Season with garlic salt and pepper. Cover with cheese and bake in hot oven at 375° for 20 minutes. Serves 6.
