  • 1 eggplant, peeled and diced
  • 2 eggs, beaten
  • about 1 c. cracker crumbs (Ritz)
  • 2 Tbsp. butter
  • salt and pepper
  • 1/2 c. onion
  • grated cheese (Cheddar is good)
  • Worcestershire sauce
  • 1 can mushroom soup

Directions

    Cook eggplant and onion in salted water until tender; drain. Mix ingredients and top with buttered crumbs.

    Bake at 350° for 30 minutes.
