Ingredients
- 1 medium eggplant
- 1 medium onion, chopped
- 1/4 c. celery, chopped
- 1 bell pepper (about 3/4 c.)
- 1 Tbsp. oleo
- 1 1/2 c. cornbread, crumbled
- 1 egg
- 3/4 c. Cheddar cheese, grated
- 1 tsp. salt
- 1 can cream of chicken soup
Directions

1Peel and cube eggplant; cook until tender.

2While eggplant is cooking, saute onion, bell pepper and celery in oleo.

3Mash eggplant, leaving water in the eggplant.

4Add crumbled cornbread and egg to mixture.

5Add onion, celery and bell pepper.

6Place in greased casserole.

7Top with cheese.

8Bake for 20 to 25 minutes at 350°.
