- 1 medium eggplant
- 4 slices toasted bread cubes
- 1 lb. sausage, cooked and drained
- 1 c. onion, finely chopped
- 1 can stewed tomatoes, drained
- 1/2 c. diced bell pepper
- 1 tsp. minced garlic
- 1 c. sharp shredded cheese
Directions

1Peel and cube eggplant.

2Cook in water until tender.

3Drain. Mix in rest of ingredients.
