  • 1 medium eggplant
  • 4 slices toasted bread cubes
  • 1 lb. sausage, cooked and drained
  • 1 c. onion, finely chopped
  • 1 can stewed tomatoes, drained
  • 1/2 c. diced bell pepper
  • 1 tsp. minced garlic
  • 1 c. sharp shredded cheese

Directions

    Peel and cube eggplant.

    Cook in water until tender.

    Drain. Mix in rest of ingredients.

    Bake in greased casserole dish until cheese melts in a 350° oven.
