Eggplant Casserole

Ingredients

  • 1 medium eggplant, peeled and crushed
  • 1/2 c. sliced celery
  • 1 tsp. salt
  • 1 can mushroom soup, undiluted
  • 1 small can pimentos, chopped
  • 2 eggs, boiled and chopped
  • bread crumbs
  • 1/4 c. chopped onion
  • 1/2 tsp. pepper
  • 2 eggs, slightly beaten
  • 1 small can mushrooms
  • 8 oz. grated cheese

Directions

    Cook eggplant, celery, onion, salt and pepper in a small amount of water.

    Drain and mash.

    Add remaining ingredients. Pour into greased 1 1/2-quart casserole.

    Top with bread crumbs. Bake at 375° for 20 minutes.
