Ingredients
- 1 medium eggplant, peeled and crushed
- 1/2 c. sliced celery
- 1 tsp. salt
- 1 can mushroom soup, undiluted
- 1 small can pimentos, chopped
- 2 eggs, boiled and chopped
- bread crumbs
- 1/4 c. chopped onion
- 1/2 tsp. pepper
- 2 eggs, slightly beaten
- 1 small can mushrooms
- 8 oz. grated cheese
Directions

1Cook eggplant, celery, onion, salt and pepper in a small amount of water.

2Drain and mash.

3Add remaining ingredients. Pour into greased 1 1/2-quart casserole.

4Top with bread crumbs. Bake at 375° for 20 minutes.
