- 1 eggplant
- 1 egg
- 1 tsp. dried onion or 1 Tbsp. fresh onion
- 8 to 10 crackers
- 4 slices American cheese or equal amount of Cracker Barrel cheese (sharp)
- 2 Tbsp. milk
Directions

1Peel and chop eggplant.

2Cook until done in small amount of water.

3Beat 1 egg; add 1 teaspoon dried onion or tablespoon of fresh onion.

4Break up 8 to 10 crackers.

5Mix all with eggplant. Break up 4 slices American cheese or equal amount of Cracker Barrel cheese (sharp).

6Mix 3 slices of cheese and 2 tablespoons milk with eggplant.

7Arrange pieces of 4th slice of cheese on top of casserole.

8Bake in greased casserole, uncovered, 30 minutes at 350°.
