Eggplant Casserole

  • 1 medium eggplant
  • 1/2 c. chopped onion
  • 1 red and/or 1 green pepper (1/2 c. each), chopped
  • 1/2 c. celery, cut up
  • 1 can stewed tomatoes or several fresh tomatoes, cut up
  • 3/4 lb. ground beef or sausage

Directions

    Slice tomatoes in half.

    Arrange in baking dish; top with seasoned bread crumbs, snip of bacon or bacon bits or pat of butter.

    Add a dash of sugar and oregano.

    Bake in a 350° oven for 20 to 25 minutes.
