Eggplant Casserole

  • 1 med. eggplant
  • 1 egg beaten
  • 3 Tbsp. butter
  • salt
  • milk
  • pepper
  • 1 small bell pepper chopped
  • 1 small onion chopped
  • 1 lb. tomatoes
  • 6 or 8 crumbled saltines

Directions

    Cut eggplant into one inch cubes, boil 3 minutes.

    Pepper and onion may be sauteed in the butter.

    Add eggplant, tomatoes, saltines, egg and milk.

    Heat to boiling in same fry pan.

    Pour into greased casserole and brown in a 350° oven.
