- 1 med. eggplant
- 1 egg beaten
- 3 Tbsp. butter
- salt
- milk
- pepper
- 1 small bell pepper chopped
- 1 small onion chopped
- 1 lb. tomatoes
- 6 or 8 crumbled saltines
Directions

1Cut eggplant into one inch cubes, boil 3 minutes.

2Pepper and onion may be sauteed in the butter.

3Add eggplant, tomatoes, saltines, egg and milk.

4Heat to boiling in same fry pan.

5Pour into greased casserole and brown in a 350° oven.
