- 1 eggplant
- 1/2 c. water
- 1/4 c. melted margarine
- 1/2 c. soft bread crumbs
- 3 eggs, beaten
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. onion, minced
Directions

1Cut eggplant into chunks (skin on).

2Cook eggplant in water until tender.

3Drain.

4Add melted margarine, bread crumbs, eggs and seasonings.

5Pour into greased casserole.

6May sprinkle top with additional bread crumbs.

7Bake, uncovered, at 350° for 20 to 25 minutes.

8Serves 4 to 6.
