  • 1 medium eggplant, peeled, cut up, cooked well and drained
  • 2 c. soda crackers
  • 1 small chopped onion
  • 1 (4 oz.) pkg. shredded cheese
  • 2 eggs
  • 1 c. milk
  • salt and pepper to taste

Directions

    Mix eggplant and eggs; beat well.

    Combine other ingredients. Mix well.

    Bake in casserole dish at 350° until done.
