- 1 small onion
- 1/2 c. evaporated milk
- 2 slices bread, crumbled fine
- 1 egg, well beaten
- 3 Tbsp. melted butter or margarine
- 1/2 green pepper, finely chopped
- grated Cheddar cheese
- salt and pepper
Directions

1Peel and cube eggplant; boil in salted water until tender; drain off water.

2Add remainder of ingredients.

3Pour into greased casserole and bake until puffy and bubbly; bake at 325° for 30 to 45 minutes.

4Add grated cheese the final 5 minutes of baking.
