- 1 eggplant
- olive oil
- salt
- 1 1/2 c. chopped onion
- 3 c. diced tomatoes
- 1 lb. pork sausage
- 1 1/2 c. bread crumbs
- 1 tsp. paprika
- 1/4 tsp. pepper
- 1 tsp. nutmeg
- 1 tsp. sweet basil
- 1 tsp. Italian seasoning
- 1 c. shredded cheese
Directions

1Cut eggplant into 1/2-inch slices. Sprinkle with salt. Saut onions, tomatoes, paprika, pepper and spices. Add meat; cook 5 minutes. Rinse eggplant. Place alternate layers of meat mixture and eggplant in casserole dish, beginning and ending with meat. Cover with foil and bake 40 minutes at 350°. Remove foil and sprinkle with bread crumbs and cheese. Bake 10 minutes more.
