- 1 large eggplant
- 2 onions
- 1/3 c. milk
- 1/2 c. grated cheese
- 1/2 c. bread crumbs
- 3 Tbsp. oleo
- 1 or 2 eggs, beaten
- salt and pepper to taste
Directions

1Peel and cut eggplant.

2Cook with onions until tender.

3Mash. Add oleo, milk, eggs, salt, pepper and 1/4 cup bread crumbs.

4Put half into buttered casserole.

5Add cheese.

6Repeat layer of eggplant; top with bread crumbs.

7Dot with butter.

8Bake at 350° for 30 minutes.
