- 1 medium eggplant
- 3 slices toasted bread soaked in 1/2 c. milk
- 2 eggs, slightly beaten
- 1 medium onion, chopped
- 3 Tbsp. melted butter or oleo
- 1/2 c. grated cheese
- Salt and pepper to taste
Directions

1Peel eggplant, cube, and boil until tender in salt water. Drain and mash.

2Mix bread that has been soaked with eggplant and add eggs, onion, oleo, and seasonings.

3Mix well and pour into a greased one-quart casserole.

4Top with cheese and bake at 350° for 30 minutes.

5Serves 6.
