- 1 eggplant
- 1 (1 lb.) can tomatoes, diced
- 1 medium onion, chopped
- shredded Cheddar cheese (about 1/2 c.)
- salt and pepper
Directions

1Peel and boil eggplant in salted water for 5 to 10 minutes. Mash.

2Add salt and pepper to taste, tomatoes, chopped onion and shredded cheese.

3(Reserve enough to sprinkle on top.)

4Stir and put in greased casserole dish.

5Bake about 30 minutes in 350° oven.

6Top with reserved cheese and heat to melt.
