- 2 eggplant
- 2 tsp. onion flakes
- 1 can mushroom soup
- Ritz crackers
- grated cheese
Directions

1Slice and boil 10 to 15 minutes in salt water.

2Drain.

3Put one layer of eggplant in baking dish.

4Add one layer of cracker crumbs.

5Sprinkle 1 teaspoon onion flakes over crackers.

6(Can use fresh onions, chopped.)

7Repeat layers.

8Pour can of mushroom soup over all other ingredients.

9Can mix or just leave soup on top.

10Sprinkle cheese on top.

11Bake for 30 minutes at 325°.
