Eggplant Casserole

  • 1 medium eggplant, peeled and sliced
  • 1 c. grated sharp cheese
  • 1 c. cracker crumbs (saltines)
  • 1 c. milk
  • 3 eggs
  • 1/2 tsp. salt and pepper
  • 1/2 stick butter or margarine

Directions

    Cook eggplant until mushy and drain.

    Add 1/2 of margarine, while hot.

    Add all ingredients, reserving 1/4 cup cheese and 1/4 crumbs; mix well. Pour into baking dish.

    Sprinkle with reserved cheese, cracker crumbs and margarine. Bake 30 minutes in 350° oven.

    Makes 6 servings.
