Eggplant Casserole

  • 1 medium eggplant
  • 1 onion, chopped fine
  • 1 1/2 c. milk
  • 2 eggs
  • 1/4 c. cracker crumbs
  • 4 Tbsp. butter
  • 1 can mushroom soup (optional)
  • 1 heaping Tbsp. Cheez Whiz (optional)

Directions

    Peel eggplant and cut in pieces the size of thumb.

    Put into 1 1/2 quarts salted boiling water; cook until tender.

    Add finely chopped onion, cracker crumbs and butter while very hot; mix well. Beat up eggs and add milk; turn into eggplant mixture.

    Add mushroom soup and Cheez Whiz (optional).

    Bake in casserole at 350° for 1 hour.
