Eggplant Casserole

- 1 medium eggplant
- 1 onion, chopped fine
- 1 1/2 c. milk
- 2 eggs
- 1/4 c. cracker crumbs
- 4 Tbsp. butter
- 1 can mushroom soup (optional)
- 1 heaping Tbsp. Cheez Whiz (optional)
Directions

1Peel eggplant and cut in pieces the size of thumb.

2Put into 1 1/2 quarts salted boiling water; cook until tender.

3Add finely chopped onion, cracker crumbs and butter while very hot; mix well. Beat up eggs and add milk; turn into eggplant mixture.

4Add mushroom soup and Cheez Whiz (optional).

5Bake in casserole at 350° for 1 hour.
