- 1 medium size eggplant
- 1 medium onion, chopped
- 1 (11 oz.) can stewed tomatoes
- 1 1/2 c. cracker crumbs
- 2 c. grated mild Colby cheese
- 1 stick Imperial margarine
- 2 eggs
- 1 tsp. salt
- 1 tsp. pepper
Directions

1Peel eggplant, slice and boil until tender. Drain water.

2Mash and add ingredients, leaving 1/2 cup cheese for topping.

3Mix thoroughly and place into greased pan. Bake in a 350° oven until done.
