Eggplant Casserole

Ingredients

  • 3 large unpeeled eggplant, cut in small cubes
  • 1 c. chopped onions
  • 3 garlic pods, chopped
  • 4 pieces celery, chopped
  • 1 bell pepper, chopped
  • 1 1/2 c. seasoned bread crumbs
  • 1 lb. shrimp or 2 small cans shrimp
  • salt and pepper to taste
  • 1/4 c. olive oil
  • 1 c. water

Directions

    Fry eggplant in olive oil on all sides.

    Wilt onion, garlic, celery and bell pepper in olive oil, then add shrimp and fry until it is pink.

    Add eggplant which was previously cooked and a cup of water. Cook slowly for about 1/2 hour.

    Add bread crumbs and more water, if needed.

    Put in casserole dish and top with bread crumbs.

    Bake at 350° for 1/2 hour.
