Eggplant Casserole

Ingredients
- 3 large unpeeled eggplant, cut in small cubes
- 1 c. chopped onions
- 3 garlic pods, chopped
- 4 pieces celery, chopped
- 1 bell pepper, chopped
- 1 1/2 c. seasoned bread crumbs
- 1 lb. shrimp or 2 small cans shrimp
- salt and pepper to taste
- 1/4 c. olive oil
- 1 c. water
Directions

1Fry eggplant in olive oil on all sides.

2Wilt onion, garlic, celery and bell pepper in olive oil, then add shrimp and fry until it is pink.

3Add eggplant which was previously cooked and a cup of water. Cook slowly for about 1/2 hour.

4Add bread crumbs and more water, if needed.

5Put in casserole dish and top with bread crumbs.

6Bake at 350° for 1/2 hour.
