  • 1 eggplant
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg
  • 1 c. cracker crumbs
  • 1 c. mushroom soup
  • 1 small green pepper
  • 1 onion
  • 1 small jar pimento
  • 1/2 c. grated cheese

Directions

    Peel and slice eggplant and soak in cold salted water for 30 minutes.

    Drain and cook until tender, 10 to 15 minutes.

    Drain again.

    Add all ingredients, place in baking dish and top with additional grated cheese.

    Bake at 350° for 30 minutes.
