Ingredients
- 1 eggplant
- 1 clove garlic
- 1 onion, chopped
- 2 tomatoes, chopped
- juice from 1 lemon
- salt and pepper to taste
- cooking oil
Directions

1Wrap whole eggplant in foil and bake at 350°, until soft. Cool, peel and chop up, seed and all.

2In skillet, cover bottom with oil.

3Chop garlic and brown.

4Add chopped onion and saute until soft.

5Then add eggplant.

6Cook for about half and hour. Add to tomatoes, chopped.

7Put juice from lemon, salt and pepper. Stir gently.

8Simmer until well blended.

9Serve hot or cold.
