- 1 medium eggplant
- 2 Tbsp. butter
- 3 Tbsp. bread crumbs
- salt and pepper to taste
- 1 egg
Directions

1Cook eggplant until tender in boiling salt water, then drain. Peel and mash it fine.

2Add bread crumbs, egg, butter and seasoning.

3Cool and form into croquettes.

4Roll in beaten egg, then in bread crumbs.

5Fry until golden brown in hot fat.
