- 1 lg. eggplant
- 2 cloves garlic
- 1 green onion, chopped
- 1/4 cup parsley
- 1 tbsp. lemon juice
- 1/2 tsp. dill weed
Directions

1Cut the stem off the eggplant and prick it all over with a fork.

2Place directly on the oven rack in a 350F oven.

3Bake about 1 hour or until eggplant is soft and has wrinkled skin.

4Remove from oven and cool.

5When it is cool enough to handle, peel and chop.

6Place in blender with remaining ingredients and blend until smooth.

7Chill before serving.
