  • 1 medium eggplant
  • 1/3 c. chopped onion
  • 2 cloves garlic, mashed
  • parsley, pepper and salt to taste
  • 1/4 tsp. fresh dill or a few shakes of dried dill
  • 2 Tbsp. buttermilk

Directions

    Broil eggplant on both sides; peel and drain.

    Mash with buttermilk and 1 tablespoon lemon juice.

    Add garlic and seasonings.
