- 1 c. flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1 c. milk
- 1 egg
- 2 Tbsp. shortening
- jelly
Directions

1Mix cornmeal, flour, salt and baking powder.

2Add milk gradually.

3Add beaten egg and melted shortening.

4Fill greased muffin pans 1/4 full.

5Put a teaspoon of jelly on top of the batter.

6Cover with more batter and bake at 400° to 425° for 20 minutes.
