  • 1 c. cornmeal
  • 1 c. flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 c. milk
  • 1 egg
  • 2 Tbsp. shortening
  • jelly

Directions

    Mix cornmeal, flour, salt and baking powder.

    Add milk gradually.

    Add beaten egg and melted shortening.

    Fill greased muffin pans 1/4 full.

    Put a teaspoon of jelly on top of the batter.

    Cover with more batter and bake at 400° to 425° for 20 minutes.
