  • 1 to 2 lb. ground beef
  • 2 c. cooked rice or cornbread
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 2 lb. ground eggplant
  • 2 medium bell peppers, ground

Directions

    Cook ground meat and onions together in skillet with a lid. When meat is cooked, add eggplant, bell pepper, and cooked rice (or cornbread). Salt and pepper to taste. Cook on low heat until eggplants and bell pepper are cooked. This will serve a family of five.
