  • 1 lb. ground beef
  • 1 small onion
  • 1/2 c. green peppers
  • 1/2 c. chopped celery
  • 1 medium eggplant
  • 2 to 3 tsp. Creole seasoning
  • 1/2 tsp. garlic and hot sauce
  • 3 c. cooked rice

    Microwave ground beef in 2-quart casserole for 5 to 6 minutes or until brown.

    Add onion, green pepper and celery.

    Cut eggplant in half.

    Remove pulp and finely chop.

    Add cut eggplant to meat mixture.
