- 1 small onion
- 1/2 c. green peppers
- 1/2 c. chopped celery
- 1 medium eggplant
- 2 to 3 tsp. Creole seasoning
- 1/2 tsp. garlic and hot sauce
- 3 c. cooked rice
Directions

1Microwave ground beef in 2-quart casserole for 5 to 6 minutes or until brown.

2Add onion, green pepper and celery.

3Cut eggplant in half.

4Remove pulp and finely chop.

5Add cut eggplant to meat mixture.
