- 1 large or 2 small eggplant
- 2 c. corn bread, crumbled
- 2 Tbsp. chopped onion
- 1/2 lb. sausage
- 1 Tbsp. parsley
- salt and pepper to taste
Directions

1Peel and boil eggplant until tender; mash.

2Cook sausage and onion until done.

4Mix all together and bake at 350° until set like dressing.
