Eggplant Dressing

  • 1 large or 2 small eggplant
  • 2 c. corn bread, crumbled
  • 2 Tbsp. chopped onion
  • 1/2 lb. sausage
  • 1 Tbsp. parsley
  • salt and pepper to taste

Directions

    Peel and boil eggplant until tender; mash.

    Cook sausage and onion until done.

    Crumble.

    Mix all together and bake at 350° until set like dressing.
