Ingredients
- 1 small cornbread
- 1 eggplant
- 1 lb. ground beef
- 1 bell pepper, diced
- 1 onion, diced
- 1/2 to 3/4 c. celery, chopped fine
- 1 can cream of chicken soup
- salt and pepper to taste
Directions

1Peel and cube eggplant.

2Boil until tender in small amount of water.

3Saute meat, pepper, onion and celery.

4Crumble cornbread, then add meat mixture, eggplant and soup.

5Add salt and pepper. Mix all together.

6Bake in greased pan at 350° for 45 minutes.

7Can be frozen.
