Eggplant Dressing

  • 1 small cornbread
  • 1 eggplant
  • 1 lb. ground beef
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1/2 to 3/4 c. celery, chopped fine
  • 1 can cream of chicken soup
  • salt and pepper to taste

Directions

    Peel and cube eggplant.

    Boil until tender in small amount of water.

    Saute meat, pepper, onion and celery.
  4. 4
    Crumble cornbread, then add meat mixture, eggplant and soup.

    Add salt and pepper. Mix all together.

    Bake in greased pan at 350° for 45 minutes.

    Can be frozen.
