  • 1 medium eggplant, cut into 8 parts (leave on skins)
  • 1 c. oil (oil of your choice)
  • 1 c. tomato sauce
  • 2 Tbsp. butter or margarine
  • 3 Tbsp. grated Parmesan cheese

    8 parts lengthwise and fry in olive oil until brown

    about 10 minutes for each part. Place tomato

    sauce in casserole.

    Add eggplant; sprinkle well with cheese.

    Dot with butter and bake in moderate oven (375°) 15 minutes.
