- 3 tbsp olive oil
- 1 large onion
- 3 cloves of garlic
- 1 red bell pepper
- 1 green bell pepper
- 1 eggplant
- 4 tomatoes
- 1 zucchini
- 4 sage leaves
- 1 branch of thyme
- 1/4 cup grated parmesan
- 1/4 cup bread crumbs
- salt and pepper to taste
Directions

1Slice the bell peppers, eggplant, tomoatoes, zucchini and onion, and dice the garlic. For 10 minutes saute the eggplant, garlic, onion and peppers in the olive oil. Season with salt and pepper. Preheat oven to 350 degrees. Put sauteed vegetables into a greased baking dish. Add the zucchinis and tomatoes on top, overlapping slightly. Add the sage, thyme, salt and pepper on top. Drizzle with olive oil. Put in oven for 20 minutes. Remove the dish, and sprinkle the parmesan and breadcrumbs on top. Drizzle more olive oil. Put back in oven for 10 more minutes.
