  • 2 Tbsp. extra virgin olive oil
  • 1/4 cup orange juice
  • 2-1/2 cups (edamame)
  • 2 cups sliced
  • 2 carrots, peeled and sliced
  • 2 medium red peppers, stem removed, sliced
  • 2 cups arugula
  • 2 cups chopped romaine lettuce

  • 32 fl oz (4 cups) fat-free milk

Directions

    Blend olive oil with orange juice; season with favorite herbs or salt-free seasoning if desired.

    Cook green soybeans (edamame) according to package directions.

    Combine mushrooms, carrots, peppers, soybeans and orange juice mixture; divide into 4 equal portions.

    Serve each portion atop 1 cup each arugula and lettuce.
