- 1 eggplant
- 1 can chickpeas
- 3 tbsp. fresh lemon juice
- 2 tbsp. tahini
- 1 clove garlic
- 1/2 tsp. salt
- 1/2 tsp. Pepper
Directions

1Pierce eggplant all over with fork.

2Microwave, on plate lined with paper towels, on high 10 minutes or until very tender, turning over once.

3Cool.

4Cut in half; scoop flesh into food processor.

5Add chickpeas, lemon juice, tahini, garlic, and salt and pepper.

6Process until smooth.

7Cover; refrigerate until cold.
