  • 1 eggplant
  • 1 can chickpeas
  • 3 tbsp. fresh lemon juice
  • 2 tbsp. tahini
  • 1 clove garlic
  • 1/2 tsp. salt
  • 1/2 tsp. Pepper

Directions

    Pierce eggplant all over with fork.

    Microwave, on plate lined with paper towels, on high 10 minutes or until very tender, turning over once.

    Cool.

    Cut in half; scoop flesh into food processor.

    Add chickpeas, lemon juice, tahini, garlic, and salt and pepper.

    Process until smooth.

    Cover; refrigerate until cold.
