- 1 medium size eggplant (approximately 1/2 lb.)
- 1/2 c. oil
- 3 medium onions, chopped
- 1 c. canned chickpeas
- 1 tsp. dried crushed mint
- 2 Tbsp. lemon juice
- 1 c. pureed tomatoes
- 1 tsp. salt
Directions

1Peel eggplant and cut into 1 1/2-inch cubes.

2Fry onions and garlic in oil.

3Remove onions and garlic, set aside.

4Add eggplant to oil.

5Stir and fry.

6Add chickpeas, stir well.

7Add onion mixture.

8Add tomatoes, lemon juice and salt.

9Cook 15 minutes.
