- 2 c. tomato sauce
- 1 c. cottage cheese
- 1/2 c. chopped parsley
- 4 oz. shredded Mozzarella cheese
Directions

1Trim ends of eggplant and slice eggplant 1/4 inch thick. Brush with a little olive oil and place under broiler about 5 minutes per side.

2Heat oven to 350°.

3Layer ingredients in dish, a little sauce, eggplant cottage cheese, sauce, eggplant, both cheeses, sauce and top with Mozzarella cheese.

4Bake 20 minutes or until it bubbles.
