- 1 eggplant, peeled and thinly sliced
- 2 eggs
- 1/2 c. milk
- Italian seasoned bread crumbs
- cooking oil
- shredded Mozzarella cheese
- 1 jar Ragu spaghetti sauce
Directions

1Beat eggs and milk together with fork until smooth.

2Heat 1/4 inch oil in frying pan over low heat.

3Dip eggplant into egg and milk mixture and roll in bread crumbs.

4Dip eggplant again into egg and milk and re-roll in bread crumbs.

5Let dry on wire racks several minutes, then fry in tho oil until golden brown.

6Drain on paper towels.
