- 1 Red onion, chopped
- 1 cup grated cheese
- 1 egg, beaten
- 1/2 cup milk
- salt, pepper to taste
- bread crumbs, buttered
Directions

1Peel eggplant, cut into small pieces, cover with water and salt and pepper.

2Boil until tender.

4Add cheese, egg, onion and milk.

5Put into buttered casserole dish, top with buttered bread crumbs. Bake at 350° for 1 hour.
