  • 1 med. Eggplant
  • 1 Red onion, chopped
  • 1 cup grated cheese
  • 1 egg, beaten
  • 1/2 cup milk
  • salt, pepper to taste
  • bread crumbs, buttered

Directions

    Peel eggplant, cut into small pieces, cover with water and salt and pepper.

    Boil until tender.

    Drain.

    Add cheese, egg, onion and milk.

    Put into buttered casserole dish, top with buttered bread crumbs. Bake at 350° for 1 hour.
