- 2 eggplant, peeled and cubed
- 1/2 c. olive oil
- 1 medium onion, minced
- 2 cloves garlic, minced
- 1/3 c. parsley
- 2 green bell peppers, chopped
- 1 can Italian tomatoes
- 3 Tbsp. tomato paste
- 1 tsp. basil
- 1 tsp. oregano
- 1/4 tsp. coriander
- 3 Tbsp. ketchup
- 3 Tbsp. chili sauce
Directions

1Preheat oven to 300°.

2Bake the eggplant for 30 minutes until soft.

3In the oil, saute onion, garlic, parsley, bell peppers and tomatoes.

4Add spices.

5Cook for 20 to 30 minutes.

6Add tomato paste, ketchup, chili sauce and eggplant.

7Cook for 20 more minutes.

8Puree in a blender; serve warm with tortilla chips.
