  • 1/4 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1 egg, lightly beaten
  • 2 Tbsp. low-fat sour cream
  • 1 tsp. cider vinegar
  • 2 Tbsp. grated Parmesan cheese
  • 1/8 tsp. salt
  • 1 (1 lb.) eggplant, peeled and cut into 1-inch pieces
